The Wine

Il Pareto, Cabernet Sauvignon, was born in the 1980s as a Supertuscan project and, already starting from the first vintage, it represents strength, power and sensory purity.
Cabernet Sauvignon, a renowned international grape variety, has perfectly adapted over time to the Tuscan terroirs, the latter giving this vine unique sensory notes. This wine is part of a new vision of oenology, where we move from the study of native vines to the study of the suitability of the territory.

Tasting: deep purple-red, characterised by intense and pleasing aromas reminiscent of red fruits, pomegranate, marasca cherry and prune. Notes of incense, bay leaf and black pepper. Full-bodied and tasty on the palate. Aromatic aftertaste. A young wine of great complexity.
Shelf life: up to 30 years

In the winery

Vinification: fermentation in stainless steel and maceration for approximately 4 weeks
Aging: at least 30 months in barrique, before refining in the bottle

This farm, dating back to 1300, extends for 385 hectares, 90 of which vineyards and 15 olive groves, was acquired by the Folonari family in 1971.
