Cultivars: 46% Frantoio, 34% Moraiolo, 10% Leccino, 10% Correggiolo
Olive production: 50 quintals
Oil yield: about 12.2%

The Mill

Olive harvest: done manually with the aid of pneumatic tools between the last ten days of October and the first ten days of November
Olive oil extraction: the olives are stored in 18-20 kg crates waiting to be pressed; time limit between harvest and pressing about 16 h.
